  • 1 cup cottage cheese (low-fat)
  • 1 cup fresh blueberries, plus extra for garnish
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option) Substitute with agave syrup for vegan
  • 1/2 cup almond flour Can substitute with oat flour for gluten-free
  • 1 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt. Be gentle to avoid crushing the blueberries.
  • Chill the mixture in the refrigerator for 15 to 20 minutes to let it firm up.
  • Use a tablespoon to scoop out portions and roll each one into a tight, compact ball. Place them on a parchment-lined baking sheet.
  • Optional: Preheat your oven to 325°F (160°C) and bake the bites for 8–10 minutes. Keep a close eye on them to prevent over-browning.
  • Once slightly cooled, you can drizzle additional honey on top if you wish and garnish with extra blueberries.

Notes

These bites can be served chilled or warm from the oven. Pair them with yogurt or sprinkle more lemon zest for added flavor.
