  • 1 pound thinly sliced beef steak You can substitute with chicken or turkey if desired.
  • 1 cup sliced bell peppers Feel free to use any color bell peppers.
  • 1 cup sliced onions
  • 1 cup provolone cheese, shredded Can substitute with Monterey Jack or cheddar.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Low-carb tortillas or dough Use your preferred low-carb option.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Sauté the sliced bell peppers and onions until they become soft.
  • Add the thinly sliced beef to the skillet and cook until nicely browned. Season the mixture with garlic powder, salt, and pepper.
  • Once everything is cooked, take the skillet off the heat and stir in the shredded provolone cheese until it melts into a gooey filling.
  • Lay the beef and cheese mixture onto your low-carb tortillas or dough. Roll them up tightly and place on a baking sheet.
  • Bake in the preheated oven for 10 to 15 minutes, or until the tops are golden brown.
  • Serve warm and enjoy!

Notes

Consider pairing these rolls with a side salad or sugar-free marinara sauce for dipping. If you have leftovers, store them in an airtight container in the fridge for up to three days.
