  • 2 cups cooked chicken, shredded Use rotisserie for convenience
  • 2 cups mushrooms, sliced Button or cremini work well
  • 1 cup heavy cream For that rich flavor
  • 4 cloves garlic, minced Fresh is best
  • 1 cup shredded cheese Cheddar or mozzarella
  • 2 tablespoons olive oil For sautéing
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or herbs of choice Feel free to experiment

Preparation and Cooking

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add sliced mushrooms and minced garlic, sautéing until the mushrooms are tender and fragrant.
  • In a large mixing bowl, combine the heavy cream, shredded chicken, sautéed mushrooms, cheese, and seasonings. Mix well until everything is well incorporated.
  • Transfer the mixture to a greased casserole dish and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  • Allow it to cool for a few minutes before serving.

Notes

This casserole pairs beautifully with a fresh green salad or steamed broccoli. Store leftovers in an airtight container for up to 3-4 days in the refrigerator. Can freeze individual portions for longer storage. Reheat to 165°F (74°C) for safe consumption.
