  • 1 lb Italian sausage (sliced)
  • 2 cups Bell peppers (red, yellow, or green, chopped)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 can Canned diced tomatoes
  • 2 tbsp Olive oil
  • 1 tbsp Italian seasoning
  • to taste Salt and pepper
  • 1 cup Shredded cheese (optional) Recommended for a bubbly finish

Cooking

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the sliced Italian sausage and cook until browned, about 5-7 minutes.
  • Toss in the chopped onion, minced garlic, and bell peppers. Sauté until the vegetables are tender, roughly 5 more minutes.
  • Stir in canned diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for about 5 minutes.
  • Transfer the mixture to a casserole dish. Optionally, sprinkle shredded cheese on top.
  • Bake in the preheated oven for about 25-30 minutes, or until heated through and cheese is bubbly and golden.
  • Serve hot and enjoy.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze portions for up to 3 months. Reheat at 350°F (175°C) until warmed through.
