  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese For the cheesy surprise center
  • 1/2 cup breadcrumbs
  • 1/2 cup marinara sauce For topping
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, Italian herbs, salt, and pepper.
  • Mix until just combined; be careful not to overmix.
  • Shape the mixture into a loaf and place it in a baking dish.
  • Create a well in the center and fill it with mozzarella cheese.
  • Top with marinara sauce and a sprinkle of additional breadcrumbs.
  • Bake for 45-55 minutes or until the meatloaf reaches an internal temperature of 165°F (75°C).
  • Let it rest for a few minutes before slicing.

Notes

Serve atop zoodles or alongside a green salad for a lighter meal. Store in an airtight container for up to three days in the fridge or freeze slices for up to three months.
