Ingredients
  

For the marinade

  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1/4 cup pineapple juice
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 teaspoon black pepper

For grilling

  • 4 pieces chicken thighs Can substitute with drumsticks or breasts.
  • as needed pineapple slices For grilling.

Instructions
 

Preparation

  • Mix together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, garlic, ginger, and black pepper in a bowl to create the marinade.
  • Place the chicken thighs into the marinade and let them soak for at least 2 hours, or overnight for the best flavor.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade, discarding the leftover marinade.
  • Grill the chicken thighs for 6-8 minutes on each side, or until fully cooked with nice grill marks.
  • In the last few minutes of grilling, add the pineapple slices to the grill until they are caramelized.
  • Serve the chicken hot with grilled pineapple slices.

Notes

Pair with jasmine rice or a crisp green salad. Store leftovers in an airtight container for 3-4 days or freeze for longer storage. Reheat in the oven or microwave.
