  • 1/4 cup honey Use fresh honey for the best flavor.
  • 1/4 cup lime juice Preferably fresh lime juice.
  • 1 tablespoon olive oil For cooking the chicken.

For the rice mixture

  • 2 cups cooked rice Any type of rice can be used, but white or brown rice works best.
  • 1/4 cup cilantro, chopped Fresh cilantro adds a nice flavor.
  • to taste Salt and pepper Adjust according to personal preference.

For assembly

  • 1 piece avocado, diced Opt for a ripe avocado for creaminess.

Marination

  • In a bowl, combine honey and lime juice. Marinate the chicken breasts in this mixture for at least 30 minutes.

Cooking Chicken

  • Heat a skillet over medium heat and add the olive oil. Cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
  • Once done, remove the chicken and let it rest for a few minutes before slicing it.

Preparing Rice

  • In a separate bowl, mix your cooked rice with chopped cilantro, salt, and pepper to taste.

Assembly

  • To create your stack, layer the flavored rice, sliced chicken, and diced avocado in an attractive pile.
