Ingredients
  

Main Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsalted butter Use at room temperature.
  • 1/2 cup heavy cream
  • 1/4 cup corn syrup
  • 1/2 teaspoon vanilla extract For flavor enhancement.
  • a pinch salt To balance sweetness.

Preparation

  • Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.

Cooking

  • In a medium saucepan, combine the sugar, corn syrup, and butter. Place the pan over medium heat.
  • Stir constantly until the sugar dissolves. Once the mixture begins to boil, stop stirring and let it cook undisturbed.
  • Use a candy thermometer to monitor the temperature.
  • When the mixture reaches 245°F (118°C), slowly pour in the heavy cream while stirring. Be careful, as the mixture will bubble up.
  • Continue cooking until the temperature reaches 250°F (121°C). Remove from heat, then stir in the vanilla extract and salt.

Finishing Touches

  • Pour the caramel into the prepared baking dish. Allow it to cool completely, about 2-3 hours.

Serving

  • Once cooled, lift the caramels out of the dish using the parchment paper. Cut into squares and enjoy!

Notes

Wrap each caramel in wax paper for gifting. Store in an airtight container at room temperature for up to two weeks.
