Hobo Casserole with Ground Beef & Potatoes

  • 1 lb ground beef
  • 4-5 medium potatoes, thinly sliced Yukon gold or russet recommended
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup milk (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Slice potatoes to about 1/4 inch thick. Dice the onion and mince the garlic.

Cooking

  • In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until fragrant, then add the ground beef. Cook until browned. Season with Italian seasoning, paprika, salt, and pepper. Remove from heat.
  • Grease a baking dish. Layer half the potatoes, followed by half the beef. Sprinkle with half the cheddar cheese. Repeat the layers with the remaining potatoes, beef, and cheese.
  • Pour beef broth (and milk, if using) over the top.
  • Cover with foil and bake for 35-40 minutes. Remove the foil and sprinkle Parmesan cheese on top, then bake uncovered for an additional 10 minutes until golden brown.

Serving

  • Let the casserole rest for about 5 minutes. Garnish with parsley, if desired, and serve.

Notes

To store leftovers, let the casserole cool completely. Transfer to an airtight container and refrigerate for up to 3-4 days. It can also be frozen for up to 3 months. Reheat in the oven or microwave before serving.
