  • 8 oz penne pasta Use whole wheat for extra fiber.
  • 1 lb lean ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt Adds creaminess without excess fat.
  • 1/4 cup grated Parmesan cheese Optional for serving.
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil or parsley for garnish
  • Olive oil for cooking

Preparation

  • Cook the penne pasta according to the package instructions. Drain it and set aside.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
  • Add the ground beef to the skillet, cooking until it is browned and fully cooked, about 5-7 minutes.

Cooking

  • Stir in the diced tomatoes (with their juices), beef broth, Greek yogurt, grated Parmesan cheese, Italian seasoning, salt, and pepper. Let it simmer for a few minutes to allow the flavors to meld.
  • Add the drained penne pasta to the skillet with the beef mixture, tossing everything together until well combined.
  • Dish out the creamy beef pasta and garnish with fresh basil or parsley for an added touch of flavor.

Notes

This creamy beef pasta is best served hot. Pair with a simple side salad or some garlic bread. For an additional flavor kick, sprinkle more Parmesan cheese on top before serving.
