  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced (any color)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the ground beef and cook until browned, stirring occasionally.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the sliced zucchini and bell pepper to the skillet.
  • Cook the vegetables until tender, about 5-7 minutes, stirring regularly.
  • Pour in the soy sauce and season with salt and pepper to taste.
  • Stir well and cook for an additional 2 minutes to combine flavors.
  • Serve the stir-fry over rice or enjoy it on its own.

Notes

For an appealing presentation, serve your stir-fry over a bed of rice or quinoa. Add a sprinkle of sesame seeds on top for extra texture. Pair it with a side of fresh fruit or a salad to round out the meal. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to a month.
