  • 1 whole rotisserie chicken, shredded
  • 16 oz package gnocchi
  • 4 cups chicken broth
  • 2 cups kale, chopped Feel free to substitute with spinach or other greens.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 whole onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • to taste Salt and pepper Be cautious with the salt if your broth is already seasoned.

Cooking Instructions

  • In a large pot, heat some olive oil over medium heat.
  • Add the chopped onion, minced garlic, diced carrots, and diced celery, sautéing them until they become tender.
  • Pour in the chicken broth and bring it to a boil.
  • Once boiling, add the gnocchi and cook according to package instructions, usually a few minutes.
  • Stir in the shredded rotisserie chicken, chopped kale, and thyme. Season with salt and pepper to fit your flavor preference.
  • Cook just until the kale has wilted and everything is heated through.
  • Serve hot and enjoy!

Notes

For a creamier soup, add a splash of heavy cream or milk at the end of cooking. Pair with crusty bread or a fresh salad. Store leftovers in an airtight container for up to three days in the fridge or freeze for longer storage.
