  • 2 cups rolled oats
  • 1 cup natural peanut butter Use creamy or chunky for best results.
  • 1/2 cup honey or maple syrup Maple syrup for vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chunks or chips Optional.
  • 1/2 cup chopped nuts Optional.

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch or 9x9-inch baking dish with parchment paper.
  • In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
  • In another bowl, mix together the rolled oats, baking soda, and salt. If desired, add chocolate chunks or nuts.
  • Gradually add the dry mixture to the wet mixture. Stir until everything is well combined, forming a thick batter.
  • Transfer the mixture to the prepared baking dish, pressing it down firmly to form an even layer.
  • Bake for 20-25 minutes or until the edges are golden brown. Remove from the oven and allow to cool for 10 minutes.
  • Once cooled, lift the bars from the pan using the parchment paper and let them cool completely before slicing into squares.

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. For longer storage, wrap individually and freeze for up to three months. Press mixture down firmly in the baking dish to create dense bars.
