  • 1 handful spinach Fresh spinach adds nutrition and color.
  • 18 slices pepperoni
  • 9 slices salami
  • 6 slices cheese (provolone) Replace with dairy-free cheese for a dairy-free option.
  • 8 ounces cream cheese, softened Substitute with a plant-based cream cheese alternative for a dairy-free option.
  • 1 tbsp Italian seasoning
  • 1/3 cup peperoncini, chopped
  • 1 tbsp peperoncini juice
  • 1/4 cup roasted red peppers
  • 1 tsp garlic powder

Preparation

  • In a bowl, combine the softened cream cheese with chopped peperoncini, peperoncini juice, Italian seasoning, garlic powder, and roasted red peppers. Mix until well combined.
  • Spread the cream cheese mixture evenly over each tortilla, making sure to cover the entire surface.
  • Lay down a handful of spinach, followed by rows of pepperoni, salami, and provolone cheese on top of the cream cheese layer.
  • Carefully roll up each tortilla tightly from one end to the other.
  • Slice each rolled tortilla into pinwheels, about 1 to 2 inches thick.
  • Serve immediately or refrigerate until ready to serve.

Notes

Store pinwheels in an airtight container in the refrigerator for up to three days. Ideal for meal prep and can be made ahead of time. Serve with dipping sauces like marinara or ranch dressing.
