  • 1 cup rolled oats
  • 1 cup grated carrots Grate finely for better texture.
  • 1/2 cup mashed bananas or unsweetened applesauce
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Optional Add-ins

  • 1/2 cup raisins or walnuts Optional; can substitute with other nuts or seeds.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the rolled oats, grated carrots, mashed bananas or applesauce, honey or maple syrup, and vanilla extract.
  • Add the cinnamon, nutmeg, baking powder, and salt; stir until well combined.
  • If using, fold in the raisins or walnuts.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, grate the carrots finely and store cookies in an airtight container for freshness. Can be enjoyed warm or at room temperature.
