  • 2 tablespoons olive oil
  • 1 pound pork shoulder, cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups Hatch green chilies, roasted and chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1 cup chopped potatoes (optional)
  • Fresh cilantro for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the cubed pork shoulder and cook until it’s browned on all sides.
  • Stir in the chopped onion and minced garlic, cooking until the onion turns translucent.
  • Pour in the chicken broth and bring it to a boil.
  • Add the chopped Hatch green chilies, cumin, salt, pepper, diced tomatoes, and potatoes, if you’re using them.
  • Reduce the heat to low and let everything simmer for about one hour, or until the pork is tender.
  • Serve hot, garnished with fresh cilantro for an extra touch of flavor!

Notes

Store leftovers in airtight containers in the refrigerator for about 3-4 days or freeze for up to three months. Reheat gently on the stove or in the microwave.
