  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade)

Seasonings

  • 2 tbsp hot honey (store-bought or homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss the diced sweet potatoes with 1 tbsp of olive oil, paprika, garlic powder, cinnamon, salt, and pepper.

Cooking

  • Spread the seasoned sweet potatoes on a baking sheet and roast for 40–45 minutes, stirring halfway through.
  • While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced onion and cook until softened.
  • Add the ground beef, seasoning it with taco mix, and cook until browned and flavorful.

Assembly

  • In each serving bowl, layer the roasted sweet potatoes, cooked ground beef, sliced avocado, and a dollop of cottage cheese.
  • Drizzle the hot honey over the top, garnishing with cilantro, red pepper flakes, or a lime wedge if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop until heated through. Add more vegetables or adjust the spice level by varying the hot honey.
