Assembly

  • 8 pieces flour or corn tortillas Use low-carb tortillas for a lighter version.
  • 2 cups enchilada sauce Store-bought or homemade.
  • 1 cup shredded cheddar or Monterey Jack cheese Feel free to add more cheese for gooeyness.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef with the diced onions until they are translucent, about 5-7 minutes.
  • Once the meat is browned, add the minced garlic, cumin, and chili powder. Sauté for another minute until fragrant.
  • Take a spoonful of the beef mixture and place it onto each tortilla. Roll them tightly and position seam-side down in a greased baking dish.
  • Pour the enchilada sauce generously over the tortillas, then sprinkle the shredded cheese on top.
  • Bake uncovered for 20-25 minutes, or until the enchiladas are bubbly and golden.

Notes

To serve, top with sour cream and fresh cilantro. Pair with Mexican rice or refried beans for a complete meal. For storage, leftovers can be kept in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven or microwave.
