  • 1 cup salsa Choose your favorite salsa for added flavor.

Spices and Seasonings

  • 1 teaspoon chili powder Adjust according to taste.
  • 1 teaspoon cumin Enhances the flavor profile of the dish.
  • to taste salt and pepper Season to your liking.

Optional Toppings

  • Shredded cheese Cheddar or Mexican blend works well.
  • Sour cream Add a dollop for creaminess.
  • Chopped lettuce For a fresh crunch.

Preparation

  • In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat.
  • Add chili powder, cumin, salt, and pepper to the beef, and stir to combine.
  • Fold in the black beans, corn, and salsa, and let it simmer for about 5 minutes, stirring occasionally.

Serving

  • In serving bowls, layer cooked rice, the beef mixture, and top with your choice of toppings like cheese, sour cream, lettuce, diced tomatoes, and avocado.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Top separately to keep fresh. Beef mixture can be frozen for up to 3 months.
