Ingredients
  

For the Filling

  • 1 lb ground beef
  • 1 packet taco seasoning or use a homemade blend
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Cooking the Beef

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease, then add the taco seasoning along with 1/4 cup of water. Allow it to simmer for about 5 minutes.

Warming the Tortillas

  • To make the tortillas pliable, warm them in a dry skillet for a few seconds on each side or pop them in the microwave briefly.

Assembling the Burrito

  • Take a tortilla and lay it flat. Layer the tortilla with the cooked rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top everything off with generous amounts of shredded cheddar and mozzarella.

Grilling the Burrito

  • Heat a clean skillet and sprinkle about 2 tablespoons of shredded cheese onto it. Place the burrito seam-side down and grill until the cheese melts and forms a crispy crust. Carefully flip and repeat on the other side.

Notes

Serve with fresh salsa, guacamole, or a refreshing salad. Great for kids’ lunchboxes, casual family dinners, or game-day fare. Keep leftover burritos in an airtight container in the fridge for up to three days, or freeze for up to a month.
