Preparation

  • Begin by washing the baby potatoes and halving them. Mince the garlic cloves and set aside.

Seasoning the Chicken

  • Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Make sure they are coated evenly.

Layering the Ingredients

  • Place the halved potatoes at the bottom of the crockpot, followed by the seasoned chicken breasts on top.
  • Pour the chicken broth over the chicken and potatoes, ensuring they are well-coated in the liquid.
  • Sprinkle the minced garlic over the chicken, and then add the grated Parmesan cheese, making sure it covers the chicken nicely.

Cooking

  • Cover the crockpot and set it to cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and fully cooked.

Final Steps

  • Ensure the chicken reaches an internal temperature of 165°F (75°C) and that the potatoes are fork-tender.
  • Gently remove the chicken and potatoes from the crockpot. Spoon any remaining sauce over the top for extra flavor.
  • If desired, chop fresh parsley and sprinkle over the dish for added color and flavor before serving.

Notes

For extra flavor, marinate the chicken in the seasoning mixture for a few hours before cooking. Feel free to add vegetables like carrots or green beans for added nutrition and flavor.
