Main Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese Use freshly grated for better flavor
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup milk

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, egg, salt, black pepper, Italian seasoning, and milk.
  • Mix all the ingredients until well combined.
  • Shape the mixture into mini loafs and place them on a baking sheet lined with parchment paper.

Cooking

  • Bake in the preheated oven for 25-30 minutes or until fully cooked, and the internal temperature reaches 165°F (75°C).
  • Let cool for a few minutes before serving.

Notes

These meatloaves can be enjoyed hot or cold and are great for meal prep. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
