  • 1.5 lbs ground chicken
  • 1 cup bread crumbs Whole wheat for added fiber can be used
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup roasted garlic (mashed) Fresh roasted garlic recommended
  • 0.25 cup chopped parsley Can be substituted with fresh basil
  • 1 piece egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground chicken, bread crumbs, grated Parmesan cheese, roasted garlic, chopped parsley, egg, salt, pepper, garlic powder, and onion powder.
  • Mix the ingredients thoroughly until well combined.
  • Transfer the mixture into a loaf pan and shape it into a loaf.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  • Allow the meatloaf to rest for a few minutes before slicing.
  • Serve alongside your favorite sides.

Notes

To store leftovers, cool completely before storing in an airtight container in the refrigerator. Best consumed within 3-4 days. Can be frozen for longer storage.
