  • 250 g pasta of your choice Feel free to use gluten-free pasta if needed.
  • 2 tablespoons butter Can substitute with vegan butter.
  • 2 cloves garlic, minced
  • 200 g mushrooms, sliced (button or cremini) Different varieties can be substituted.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan cheese, grated Can use vegan cheese or omit for a dairy-free version.
  • 1 whole lemon, juice
  • to taste fresh parsley, chopped (for garnish)

Preparation

  • Begin by cooking the pasta according to the package directions until it’s al dente. Drain and set aside.
  • In a large skillet, melt your butter over medium heat, allowing it to bubble.
  • Add the minced garlic to the skillet, sautéing for about a minute until fragrant.
  • Toss in the sliced mushrooms along with salt and black pepper. Cook until the mushrooms are tender, about 5 to 7 minutes.
  • Add the pasta back to the skillet with the sautéed mushrooms. Mix in the grated parmesan cheese and lemon juice, tossing until well combined.
  • Garnish with freshly chopped parsley before serving.

Notes

For a creamier texture, consider adding a splash of heavy cream or white wine to the mixture. Always taste as you go to adjust seasoning and cheese according to your preference.
