Ingredients
  

For the Bites

  • 1 cup plain Greek yogurt choose between nonfat or full-fat based on your dietary needs
  • 1/4 cup creamy peanut butter or opt for almond butter if you prefer
  • 2 tablespoons honey maple syrup makes a great vegan substitute
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips plus extra for topping, if desired

For Coating

  • 1 cup dark chocolate chips semi-sweet chocolate chips also work well
  • 1 teaspoon coconut oil optional, for a smoother chocolate melting experience

Optional Toppings

  • Crushed peanuts
  • Sea salt flakes
  • Shredded coconut

Preparation

  • In a mixing bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir until the mixture is smooth and fully blended.
  • Gently fold in the mini chocolate chips, reserving a few for topping if you like.
  • Line a baking sheet with parchment paper. Scoop out spoonfuls of the mixture and form them into tablespoon-sized balls. Flatten these into discs and place them on the baking sheet. Freeze for about 1 to 2 hours until they’re firm.

Coating

  • Melt the dark chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until the mixture is smooth.
  • Retrieve the frozen discs from the freezer. Dip each piece into the melted chocolate using a fork or dipping tool, letting any excess chocolate drip off.
  • Return each coated bite to the parchment-lined baking sheet. Before the chocolate sets, top them with crushed peanuts, sea salt, or shredded coconut.
  • Freeze the coated bites for another 15 to 20 minutes until the chocolate is tightly set.

Storage

  • Store these delicious bites in an airtight container in the freezer, and allow them to sit at room temperature for 2 to 3 minutes before serving for the best texture.

Notes

Feel free to experiment with different nut butters or sweeteners to customize your bites. You can make them more kid-friendly by incorporating fun toppings or letting kids help shape them.
