  • 4 large potatoes, thinly sliced
  • 2 large onions, thinly sliced Vidalia or yellow onions work beautifully
  • 2 tablespoons butter
  • 2 cups shredded cheese Gruyère or mozzarella recommended
  • 1 cup heavy cream Substitute with half-and-half or whole milk for a lighter version
  • Salt and pepper to taste
  • Fresh thyme for garnish Optional but recommended

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat. Add your sliced onions and let them cook slowly until they’re beautifully caramelized, which should take about 15-20 minutes.
  • In a greased baking dish, layer half of the sliced potatoes, followed by half of the caramelized onions, and then half of the cheese. Repeat this layering until everything is nicely stacked.
  • Pour the heavy cream over the top layer and sprinkle with salt and pepper for seasoning.
  • Cover the dish with aluminum foil and pop it into the oven to bake for 45 minutes.
  • After 45 minutes, remove the foil, sprinkle the remaining cheese on top, and bake for an additional 15 minutes or until the top is golden and bubbly.
  • If you want to elevate the presentation, garnish with fresh thyme before serving warm.

Notes

This dish can stand alone as a hearty main course or serve as a delightful side dish. Pair it with a crisp green salad and a glass of white wine. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Allow to cool before freezing and thaw overnight in the fridge before reheating.
