  • 2 cups cooked white rice
  • 2 cups shredded cooked chicken (e.g., rotisserie)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) French onion soup
  • 1 cup sour cream
  • 1.5 cups shredded mozzarella or Swiss cheese
  • 1.5 cups French fried onions, divided
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley for garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, shredded cheese, 1 cup of French fried onions, garlic powder, onion powder, salt, and black pepper. Mix well until everything is evenly incorporated.
  • Grease a 9×13-inch baking dish and transfer the mixture, spreading it evenly.

Baking

  • Bake uncovered for 30 minutes until bubbly around the edges.
  • Sprinkle the remaining ½ cup of French fried onions on top and bake for an additional 5 minutes until golden brown and crispy.
  • Remove from the oven, garnish with chopped parsley, and serve hot.

Notes

For an extra kick, add some sautéed mushrooms or fresh herbs like thyme or rosemary. If you enjoy a bit more crunch, consider mixing in some breadcrumbs with the French fried onions before adding them to the top. Be sure to taste your mixture before baking to adjust the seasoning levels to your preference.
