Ingredients
  

For the Roll Ups

  • 1 lb thinly sliced roast beef (deli style or leftover) You can substitute with turkey or chicken if preferred.
  • 1.5 cups shredded mozzarella or provolone cheese Feel free to use any cheese you have on hand.
  • 4 large flour tortillas
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

For the Au Jus

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Lay the tortillas flat and add slices of roast beef along the center of each one, followed by a generous layer of shredded cheese.
  • Roll the tortillas tightly and place them seam-side down on your prepared baking sheet.
  • Brush the tops with melted butter, then sprinkle with garlic powder, onion powder, and dried parsley.

Baking and Making Au Jus

  • Bake in the preheated oven for about 12–15 minutes, until the tortillas are golden and the cheese is perfectly melted.
  • While the roll-ups are baking, prepare the au jus. In a saucepan, combine the beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper. Let it simmer for 5–7 minutes.
  • Remove the roll-ups from the oven, slice them into pieces, and serve warm with the au jus for dipping.

Notes

These roll-ups are best served hot and can be paired with sides like Caesar salad, sweet potato fries, or coleslaw.
