  • 4 large flour tortillas (10-inch) Flour tortillas hold up better and provide a soft, chewy texture.
  • 2 cups cooked chicken breast, shredded Use rotisserie chicken for convenience.
  • 1.5 cups Mexican cheese blend, shredded For that authentic flavor.
  • 0.5 cup Monterey Jack cheese, shredded Ensures smooth melting.
  • 1 medium bell pepper, diced Any color works well.
  • 0.5 medium red onion, finely diced Small uniform pieces cook better.
  • 2 tablespoons olive oil or butter For cooking the quesadillas.
  • 1 teaspoon chili powder For seasoning the chicken.
  • 0.5 teaspoon cumin Adds authentic Mexican flavor.
  • 0.5 teaspoon garlic powder For depth of flavor.
  • To taste salt and pepper

Preparation

  • In a mixing bowl, combine the shredded chicken with chili powder, cumin, garlic powder, salt, and pepper. Ensure everything is well coated.
  • Dice the bell pepper and red onion into small, even pieces (about ¼-inch).

Cooking

  • Take a tortilla and lay it flat. Evenly sprinkle half of the Mexican cheese on one half of the tortilla. Add the seasoned chicken, followed by the diced vegetables, then top with the remaining cheese. Fold over the tortilla.
  • Heat the olive oil or butter in a large skillet over medium heat. Cook your quesadilla for 3-4 minutes on each side, until golden brown and the cheese has melted completely.
  • Once cooked, let the quesadilla rest for 2-3 minutes before cutting.
  • Using a sharp knife or pizza cutter, slice the quesadilla into triangular wedges.

Serving

  • Serve immediately while the cheese is still gooey and hot. Garnish with fresh cilantro and serve with sour cream, guacamole, and salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze wrapped for about a month. Reheat in a skillet to retain texture.
