  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 piece bell pepper, sliced Choose your favorite color.
  • 1 piece onion, sliced Yellow or red for best flavor.
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa Choose mild or spicy based on preference.
  • 2 cups cooked rice Brown or white works well.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese Cheddar or Mexican blend works well.
  • to taste Salt and pepper
  • to taste Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, bell pepper, onion, black beans, corn, salsa, cooked rice, chili powder, cumin, salt, and pepper. Mix everything thoroughly.
  • Transfer the mixture to a greased casserole dish.
  • Top generously with shredded cheese.
  • Bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
  • If you'd like, garnish with fresh cilantro before serving.

Notes

This casserole pairs wonderfully with fresh guacamole, tortilla chips, or a crisp salad. Leftovers can be stored for 3-4 days in the fridge and can also be frozen for up to 3 months. Consider using jalapeños for added heat or mixing in sour cream for a creamier texture.
