  • 2 cups cooked pasta (any kind)
  • 1 cup diced vegetables (bell peppers, zucchini, or spinach) Mix of your choice
  • 1 cup cooked protein (chicken, tofu, or beans) Choose based on preference
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar) For topping
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for garnish Fresh herbs (basil or parsley)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Heat olive oil in a large pan over medium heat. Add diced vegetables, sprinkle with salt and pepper, and sauté until tender (about 5-7 minutes).
  • In a large mixing bowl, combine the cooked pasta, sautéed vegetables, cooked protein, and marinara sauce. Mix well until everything is evenly coated.
  • Transfer the mixture to a baking dish and sprinkle the shredded cheese on top.

Cooking

  • Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.

Serving

  • Remove from the oven, garnish with fresh herbs, and let it cool for a few minutes before serving.

Notes

Serve hot, best paired with a fresh garden salad and crusty bread. Can be stored in an airtight container in the refrigerator for up to 3 days.
