Ingredients
  

Cake Ingredients

  • 1 cup all-purpose flour Can use gluten-free flour blend if needed.
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs Best if at room temperature.
  • 1 cup granulated sugar Can substitute with sugar substitute to reduce calories.
  • 1 teaspoon vanilla extract

Filling and Garnish

  • 1 cup sweetened whipped cream Store-bought can be used.
  • 1 cup cherries, pitted and chopped
  • 1/2 cup chocolate ganache Store-bought or homemade.
  • Fresh cherries for garnish
  • Chocolate curls for decoration

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 15x10-inch jelly roll pan by greasing and lining it with parchment paper.
  • In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
  • In a separate bowl, beat the eggs and granulated sugar until light, fluffy, and pale in color. Add the vanilla extract.
  • Gently fold the sifted dry ingredients into the egg mixture until just combined.
  • Pour the batter into the prepared pan, spreading it out evenly.

Baking

  • Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
  • Remove from oven and immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Roll the cake from the short end along with the towel and let it cool completely.

Filling

  • Once cooled, carefully unroll the cake and spread the whipped cream evenly over the top.
  • Sprinkle the chopped cherries over the whipped cream.
  • Roll the cake back up without the towel, placing the seam side down.
  • Spread the chocolate ganache over the surface of the rolled cake.
  • Decorate with fresh cherries and chocolate curls before slicing.

Serving

  • Slice and serve to your guests, ideally chilled.

Notes

Store covered in the refrigerator for up to 3 days. Freeze before adding ganache if desired.
