  • 3 large eggs, beaten
  • ¼ teaspoon kosher salt
  • ¼ teaspoon white pepper
  • 3 tablespoons butter, divided
  • 2 slices of bread
  • 1 slice of cheddar cheese
  • 2 slices of deli ham

Preparation

  • In a medium bowl, combine the beaten eggs, kosher salt, and white pepper.
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • While the butter is melting, butter one side of each of the two slices of bread using the remaining tablespoon of butter. Set these aside.

Cooking

  • Once the butter has melted, pour the egg mixture into the skillet. Swirl the pan to allow the eggs to reach the edges.
  • Place both slices of bread, butter-side up, onto the egg mixture, ensuring they are touching on the bottom edge.
  • Cook undisturbed for about 5-7 minutes until the eggs are no longer runny.
  • Carefully flip the cooked eggs with both slices of bread. If cooked properly, it should be easy to flip.
  • On one slice of bread, top with cheddar cheese and then the slices of ham. Fold the excess egg over the ham.
  • Fold the other slice of bread over to create your sandwich.
  • Flip the sandwich and cook for an additional 2-3 minutes, until the cheese is melted and the sandwich is browned and heated through.

Serving
