  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 500 ml chicken or vegetable stock Using a stock cube can simplify the process
  • 150 ml double cream Feel free to swap with a lighter alternative
  • ½ bunch fresh basil

  • In a medium, high-sided skillet, warm the olive oil over medium heat for about 2 minutes.
  • Add the chopped onion and minced garlic. Sauté gently until both are soft, fragrant, and translucent.
  • Stir in the chopped tomatoes and allow them to caramelize slightly, enhancing their natural sweetness.
  • Pour in the stock, then add the spaghetti, ensuring it’s fully submerged in the liquid.
  • Let the pasta cook for approximately 15 minutes, stirring occasionally, until it reaches al dente perfection.
  • Gently mix in the double cream and fresh basil. Allow everything to sit for a couple of minutes to let the flavors meld together beautifully.
  • Dish up while hot, garnished with additional basil if you desire!

Notes

For best results, avoid burning the garlic while sautéing. Adjust seasoning to your taste. Explore adding a splash of white wine for extra flavor or consider alternatives for cream.
