  • 1 package Frozen meatballs Any kind of frozen meatballs will work.
  • 4 cups Chopped vegetables Carrots and potatoes are recommended.
  • 4 cups Beef broth Can substitute with chicken broth.
  • 1 medium Onion Sliced for layering.

Seasonings

  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 teaspoon Garlic powder To taste.

Preparation

  • Start by placing frozen meatballs at the bottom of your slow cooker.
  • Next, add the chopped vegetables right on top of the meatballs.
  • Pour beef broth over the meatballs and veggies for moisture.
  • Slice the onion and layer the pieces on top; that’s where the flavor truly builds.
  • Sprinkle your preferred seasonings over everything to taste.
  • Cover the slow cooker, and cook on low for 6-8 hours or high for 3-4 hours until everything is tender and delicious.

Notes

To store leftovers, let the pot roast cool completely before transferring it to an airtight container. It will keep well in the fridge for 3-4 days. For longer storage, consider freezing portions for up to three months. Brown the meatballs for extra flavor. Red wine can enhance taste when added to the broth.
