Ingredients

Main ingredients

  • 2 lbs boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1.5 tablespoons olive oil
  • 1-2 cloves garlic, minced
  • 0.5 cup chicken broth
  • 0.33 cup heavy cream (room temperature)
  • 0.25 cup freshly grated Parmesan cheese (room temperature)
  • 0.33-0.5 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes (optional)

Instructions

Preparation

  • Preheat the Oven: Set your oven to 400°F (200°C) to prepare for the baking step.
  • Season the Chicken: Generously sprinkle salt and pepper over the chicken breasts, ensuring all sides are well-seasoned.

Searing

  • Sear the Chicken: In a hot skillet, heat the olive oil and sear the chicken on both sides until golden brown, about 3-4 minutes per side. Remove it from the skillet.

Making the Sauce

  • Make the Sauce: In the same skillet, add minced garlic and cook until fragrant. Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, sun-dried tomatoes, oregano, and red pepper flakes if using. Mix well.

Final Cooking

  • Combine and Bake: Return the chicken to the skillet, spooning the sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  • Rest and Serve: Allow the dish to rest for a few minutes before serving. This helps the flavors meld even further!

Notes

Best enjoyed over mashed potatoes or creamy polenta. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
