Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened Ensure butter is at room temperature for best results.
  • 1 cup brown sugar Can substitute with granulated sugar for a lighter flavor.
  • 1 cup molasses Can be substituted with maple syrup or honey.
  • 4 large eggs
  • 1 cup hot water Add more if the batter is too thick.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour your cake pan to prevent sticking.
  • In a mixing bowl, whisk together the dry ingredients (flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt) until well combined.
  • In another bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  • Add the molasses and eggs to the butter-sugar mixture, whisking until fully incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, alternating with the hot water, mixing until just combined.
  • Pour the batter into your prepared cake pan, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

This cake can be topped with powdered sugar or cream cheese frosting. For added texture, consider adding nuts or dried fruits.
