  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup Tzatziki sauce (homemade or store-bought)
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced Can substitute with bell peppers or spinach.
  • 0.5 cup red onion, chopped
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano Can substitute with thyme or rosemary.
  • Salt and black pepper, to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil.
  • In the prepared baking dish, add the chicken pieces, cherry tomatoes, zucchini, and red onion.
  • Drizzle everything with olive oil and sprinkle with dried oregano, salt, and pepper. Toss well to combine.
  • Evenly spoon the Tzatziki sauce over the casserole mixture, gently mixing to coat the chicken and vegetables.
  • Bake uncovered for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Once out of the oven, sprinkle the crumbled feta cheese on top and serve hot.

Notes

For serving, pair with warm pita bread or a simple Greek salad. A dollop of extra Tzatziki on top can enhance flavors. To store leftovers, keep in an airtight container for up to 3 days. Freeze tightly wrapped for longer storage.
