Cooking

  • Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring occasionally until the rice is fully cooked and the pudding thickens.
  • Afterward, stir in the vanilla extract and scoop the pudding into serving dishes.
  • Top with your choice of toasted coconut, fresh fruit, or a sprinkle of cinnamon right before serving!

Notes

Store leftover pudding in an airtight container in the refrigerator for 3-4 days or freeze it for up to a month. Reheat gently on the stove, adding a splash of coconut milk if needed. Rinse rice before cooking for creaminess, and try adding nut butters or spices for creative variations.
