  • 2 cups Cooked, shredded chicken Feel free to substitute rotisserie chicken.
  • 8 oz Cream cheese Softened for easy mixing.
  • 1 cup Shredded cheese (like cheddar or Monterey Jack) Use a mix for richer flavor.
  • 1 packet Taco seasoning Adjust to taste.

Taquito Assembly

  • 12 pieces Corn tortillas Warm them for easier rolling.
  • 2 tbsp Olive oil or cooking spray For brushing or spraying.

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, combine shredded chicken, cream cheese, shredded cheese, and taco seasoning until well mixed.
  • Warm the tortillas briefly in the microwave for easier rolling.

Assembly & Baking

  • Place a generous spoonful of the chicken mixture on each tortilla and roll tightly.
  • Lay the rolled taquitos seam-side down on the prepared baking sheet. Spray or brush with olive oil.
  • Bake for 15-20 minutes until golden and crispy, turning halfway through for even cooking.

Notes

Serve the taquitos with guacamole, salsa, or sour cream for a delightful meal. To keep leftovers fresh, store in an airtight container in the refrigerator and consume within 3 days.
