Ingredients
  

Main Ingredients

  • 1 pound ground beef Can use plant-based protein for vegetarian option.
  • 1 package taco seasoning
  • 8 ounces pasta Any choice of pasta; smaller shapes recommended.
  • 2 cups cheese Cheddar or Mexican blend.
  • 1 can diced tomatoes
  • 1 can black beans Rinsed and drained.
  • 1 cup corn Optional.
  • 4 cups water or beef broth Use broth for added flavor.
  • to taste salt and pepper Adjust according to taste.

Instructions
 

Preparation

  • In a crockpot, brown the ground beef and drain the grease.
  • Add the taco seasoning, diced tomatoes, black beans, corn (if using), and water or broth to the pot.
  • Stir in the uncooked pasta until well combined.

Cooking

  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the pasta is cooked and the sauce has thickened.
  • Before serving, stir in the cheese until melted and creamy. Season with salt and pepper to taste.

Notes

Serve in bowls topped with additional cheese, sour cream, and chopped cilantro. Pair with taco chips or guacamole. Optional vegetarian modifications and storage instructions provided.
