  • 4 cups baby potatoes, halved

Preparation

  • In a bowl, combine the grated Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper.
  • Layer the halved baby potatoes in the bottom of your crockpot.
  • Season the chicken breasts with salt and pepper, then arrange them on top of the potatoes.
  • Drizzle the olive oil and chicken broth over the chicken and potatoes.
  • Evenly sprinkle the Parmesan garlic mixture over everything in the crockpot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fork-tender.
  • Before serving, garnish with chopped parsley for a fresh touch.

Notes

For extra flavor, consider searing the chicken before placing it in the crockpot. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to three months.
