Preparation

  • Place the chicken or beef in the bottom of the slow cooker.
  • Layer the sliced bell peppers, onions, and fajita seasoning on top of the meat.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the meat is tender and fully cooked.
  • Once cooking is complete, shred the chicken or slice the beef, mixing it with the cooked vegetables in the slow cooker for even flavor distribution.

Serving

  • Dish out the fajita mixture into tortillas, over rice, or enjoy it on its own!

Notes

For more flavor, consider marinating the chicken or beef in fajita seasoning and lime juice for a few hours before cooking. Use fresh produce for the best flavor and texture, and add jalapeƱos for extra heat.
