  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup caper berries Can substitute with green olives if needed.
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 2 tbsp butter For creating the sauce.
  • Cooked pasta or rice Optional for serving.

Preparation

  • Begin by mincing the garlic and squeezing fresh lemon juice.
  • Heat olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper.
  • Sear the chicken in the heated oil until golden brown on both sides, about 4 minutes per side.
  • Layer the seared chicken in your crockpot, then add the minced garlic and capers on top.
  • Pour in the chicken broth and freshly squeezed lemon juice.
  • Sprinkle the Italian seasoning over everything, cover, and cook on low for 6 hours or on high for 3 hours.
  • Once cooked, carefully remove the chicken from the crockpot.
  • Whisk the butter into the remaining juices to create a luscious sauce.
  • Serve the chicken drizzled with sauce over cooked pasta or rice, garnished with chopped parsley.

Notes

For the best experience, plate and serve the meal fresh, drizzling the sauce just before serving. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator or frozen for later.
