  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Vegetable broth can be used for a vegetarian twist.
  • 2 cups diced potatoes Can be substituted with cauliflower for a healthier spin.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese For extra flavor, consider a sprinkle of blue cheese.
  • 1 cup milk
  • 1 tablespoon Worcestershire sauce

Preparation

  • In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is cooked through. Be sure to drain any excess grease.
  • Transfer the mixture to your crockpot.
  • Pour in the beef broth and add the diced potatoes, carrots, celery, Italian seasoning, salt, and pepper.
  • Cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
  • Stir in the milk, shredded cheddar cheese, and Worcestershire sauce.
  • Let it cook for an additional 30 minutes on low until the cheese melts and the soup is piping hot.

Notes

Serve garnished with additional shredded cheese, croutons, or fresh parsley. Pairs well with crusty bread or fresh side salad. For extra depth of flavor, consider adding diced tomatoes or a splash of hot sauce. If you prefer a thicker soup, blend a portion or add cornstarch mixed with water before the last cooking stage.
