  • 1/2 cup fresh lemon juice
  • 1/4 cup butter Can be substituted with olive oil for a lighter version
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth Low-sodium version can be used
  • 1/4 cup capers Can be swapped for olives for a different flavor

  • Fresh parsley for garnish

Preparation

  • Place the chicken breasts in the crock pot.
  • In a bowl, mix together the lemon juice, butter, minced garlic, chicken broth, capers, salt, and pepper.
  • Pour this mixture over the chicken.
  • Cover the crock pot. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  • Garnish with fresh parsley before serving.

Notes

To store leftovers, keep them in an airtight container in the fridge for up to 3 days. For longer storage, freeze the cooked chicken and sauce for up to 2 months.
