Ingredients

Main Ingredients

  • 2 cups raw pumpkin seeds
  • 2 tablespoons kosher salt for soaking
  • 0.5 tablespoon sea salt for seasoning
  • 1 pinch garlic powder or to taste

Instructions

Preparation

  • Clean the Seeds: Start by removing the seeds from the pumpkin pulp. Rinse them under cold water to eliminate any remnants of the pumpkin flesh.
  • Soak: In a bowl, mix the seeds with warm water and add the kosher salt. Let them soak for about 30 minutes.
  • Preheat the Oven: While the seeds are soaking, preheat your oven to 325°F (165°C).
  • Drain and Dry: After soaking, drain the seeds and pat them dry with a cloth or paper towels.
  • Season: Spread the seeds evenly on a baking sheet. Add the sea salt and garlic powder, mixing them well.
  • Bake: Place the baking sheet in the center of the preheated oven. Stir every 10 minutes. Bake for about 1 hour or until the seeds are light brown and crispy.

Notes

Store roasted pumpkin seeds in an airtight container at room temperature for about a week. For longer storage, freeze in a sealed bag for up to three months. Consider experimenting with spices such as cayenne or taco seasoning.
