  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach About 120 g.
  • 4 ounces feta cheese, crumbled About 115 g.
  • 2 cloves garlic, minced
  • to taste Salt
  • to taste Black pepper
  • 1 teaspoon red pepper flakes (optional, for heat)

Preparation

  • Start by bringing a large pot of salted water to a boil.
  • Add the gnocchi to the boiling water and cook according to package instructions, usually about 2-3 minutes, or until they float to the surface. Remove them using a slotted spoon and let them drain.

Cooking

  • In a large frying pan, heat the olive oil over medium-high heat.
  • Once hot, add the cooked gnocchi. Let them cook undisturbed for 2-3 minutes until they’re golden brown and crispy on one side.
  • Gently stir the gnocchi and allow them to crisp up on all sides for another 2-3 minutes.
  • Reduce the heat to medium, then add the minced garlic, and sauté for about 1 minute, being careful not to let it burn!
  • Toss in the fresh spinach, stirring lightly until it wilts—this will take about 2-3 minutes.
  • Season the mixture with salt, black pepper, and red pepper flakes if you want a kick.
  • Remove from the heat and stir in the crumbled feta cheese. Allow it all to meld together before serving it on plates.

Notes

For serving, consider pairing with a simple arugula salad or grilled chicken for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
