Ingredients
  

For the fried cod

  • 2 fillets cod fillets
  • 1 cup flour
  • 1 cup breadcrumbs Can use gluten-free breadcrumbs if desired.
  • 1 large egg
  • 1 cup buttermilk
  • to taste Salt and pepper Generously season cod
  • as needed for frying Vegetable oil Oil should be heated to around 350°F.

For the sandwich assembly

  • 2 pieces sandwich buns Consider toasting lightly.
  • to taste Lettuce
  • to taste Tomato slices
  • to taste Tartar sauce For serving.

Preparation

  • Preheat vegetable oil in a frying pan over medium heat.
  • Season the cod fillets generously with salt and pepper on both sides.
  • Set up a breading station: Place flour in one bowl, whisk the egg and buttermilk in the second, and place breadcrumbs in the third.

Breading and Frying

  • Dredge each cod fillet in flour, dip them into the egg mixture, and finally coat them with breadcrumbs, ensuring an even cover.
  • Carefully fry the breaded cod in the hot oil for about 4-5 minutes on each side, or until golden brown and cooked through.
  • If desired, toast your sandwich buns lightly in the pan for added texture.

Assembly

  • To assemble your delicious sandwich, place the fried cod on a bun, then layer with crisp lettuce, fresh tomato slices, and a generous dollop of tartar sauce.
  • Serve hot and savor every bite!

Notes

For added crunch, consider double-dipping the cod slices in the egg mixture and breadcrumbs. Store leftovers separately in airtight containers. Best enjoyed fresh; leftover fried cod can last up to 2 days in the fridge.
