Ingredients
  

For the Taquitos

  • 2 cups cooked shredded chicken Using rotisserie chicken works wonders
  • 4 oz cream cheese Softened
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup salsa Choose your preferred spice level
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • to taste Salt and black pepper
  • 8 small flour or corn tortillas
  • as needed Cooking spray or oil For brushing

Optional Toppings

  • Chopped cilantro
  • Sour cream
  • Guacamole
  • Extra shredded cheese

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, mix together the shredded chicken, softened cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper until well combined.
  • Warm the tortillas in the microwave for about 20 seconds to make them easier to roll.
  • Spoon 2-3 tablespoons of the chicken mixture onto one side of each tortilla and carefully roll them tightly.
  • Place the taquitos seam-side down on the prepared baking sheet.
  • Lightly brush the tops with oil or spray with cooking spray for that extra crisp.

Baking

  • Bake in the oven for 15-20 minutes or until they are golden brown and crispy. For an extra crispy finish, broil for 1-2 minutes at the end.

Serving

  • Serve warm with sour cream, guacamole, or your favorite toppings.

Notes

For added flavor, consider including chopped green onions or bell peppers in the filling. Use store-bought shredded chicken or leftovers for easier prep. Do not skip warming the tortillas to prevent breaks while rolling.
